Originally from Alsace, France, Van Luu began his culinary training at Fox Valley Technical College while working at The American Club in Kohler, Wisconsin. Van then spent two years in Chicago working at a world-renowned restaurant, Charlie Trotter’s, before continuing his career as chef at Restaurant Charlie in Las Vegas. While there, Restaurant Charlie garnered many awards, including a 1-star rating from the Michelin Guide and Best New Restaurant in the US.
An offer from the Bartolotta Restaurant Group prompted Van to return to Milwaukee. Van then helped open Prodigal Gastropub, followed by a tenure at Potawatomi Hotel and Casino as part of their culinary team. In that time Van met and married his wife Michele, had a son, Thomas, and developed a strange addiction to working in his backyard and disc golfing with friends.
Van joined the Buckley family in the fall of 2018, effectively putting his semi-professional disc golfing career on hiatus … for which we are eternally grateful!!!
